I posted this in the Bitwig Discord to confirm there is no native way of doing it, I don't know if the controller API actually supports this (assigning destinations to Remote Control panel slots on the fly) but if it does I think this would be an awesome addition to your scripts.
What is like to see is a Last Touched Remote Control panel. So all eight knobs are filled up with the last eight parameters of the device which you touched with the mouse (clicked on but not necessarily moved.)
This would be awesome for two reasons.
1. Making it so much easier to make your own Remote Control panels (assuming you can save/export and rename from the Last Touched one.)
2. Make sound design so much easier on devices that don't have any preset Remote Control panels set up. Especially when using a controller with displays such as the Ableton Push range. I would love to not be reaching for the mouse so much, generally going back and forth over a few controls at a time.
