1. Yes, you can complete projects in every DAW. That doesn’t mean that each project would have the same smooth workflow in every DAW. Just pointing you to the absolutely essential part of your statement which hasnt been spoken out loud: DAWs differ in fun/convenience/workflow-speed. Some more than others. Therefore:IMO, every DAW is amazing these days and I could complete a project entirely in any one of them, including Bitwig.
That being said, It would be much nicer if Bitwig really would be the "single solution for realizing any musical idea across any stage of production" it states to be on bitwig.com
I recommend to anyone to get out of the feature rat race.
2. If there are glaring hurdles to more fun/convenience/workflow-speed, mentioning these hurdles does not mean entering a rat race, it’s called giving feedback. User feedback, you know. Bitwig has accumulated quite a list of user feedback over the years, concerning QoL and editing wishes. Users who wish for these missing features are not part of a rat race. (Unless you want to define objectively measurable workflow speeds and pointing out problems as rat race - which would be a weird anti-growth-mindset Definition)
Yes DAWs nowadays are amazing, compared to older-days-DAWs.
And still, asking for improvements is not entering a rat race. It’s called growth. "Amazing" is relative, and it can get more amazing, that's for sure.
